According to studies performed at The University of Waikaito, a few areas of
New Zealand produce a Manuka honey which contains a second type of
antibacterial activity in addition to hydrogen peroxide activity. This
secondary activity is measured in a laboratory on a scale of 1-20 with Manuka
honey testing above 10 referred to as “Active Manuka.” Amazingly,
this antibacterial activity is unaffected by enzymes in the body that destroy
the hydrogen peroxide components. It is also unaffected by light, heat, or
time. In fact, experience has shown that some Active Manuka actually increases
its level of activity over time.

Q: Does the bio activitiy of manuka honey by The Wild Bee have an end date? I've had half a
jar stored on shelf for a couple of years which has turned darker than
when first bought but tastes okay.

A: The Manuka honey is most likely fine to eat. The circumstances that would
make the Manuka honey not safe to eat is if water entered the jar at anytime.
If this is the case, the Manuka honey will have a sour smell or possible
collect mold. By my guess, if it has been in the cupboard for two years
and still tastes and smells good then you have preserved it and it is
still okay to eat.
The reasoned for
the darkened color is that enzymes start to digest the sugars over time.
The bee's create a certain sugar to moisture ratio. This specific ratio
is what keeps Manuka honey good for so long.
When the enzymes eat the
sugar over time, this process is called crystallization. Crystallization
does not harm the Manuka honey in any way. The only slight negative is when the
sugar level gets too low, the peroxide levels also lower, rendering it
with less of a healing factor.
Also, be sure to never dip a wet
spoon (or licked spoon) in your Manuka honey jar. The added water or moisture
mixes with the sugar and will speed up crystallization.
To
reverse the crystallization that may have occurred, bring water to a
boil in a pot. Remove pot from hot surface. Place your jar of Manuka honey in
the hot water and let sit until water naturally cools.
Sugar
molecules will re-line up and the moisture levels will be restored,
along with the healing power of the natural hydrogen peroxide.

Q: Will your Manuka Honey by The Wild Bee cure yeast problems throughout my entire body?

A: Manuka honey is great for putting on poor healing wounds, burns and taking internally for helicobacter pylori and perhaps healing mild stomach ulcers. However manuka honey is not what you need for yeast problems.
Probiotics are what you need for yeast overgrowth.
I would recommend HLC Synbiotic Intensive Sachets by Pharmax. Take right before dinner. Do this for 14 days.
You may notice increased gas, bloating and perhaps a headache. This is from the yeast die-off.
It is recommended to take increased fiber and antioxidants like vitamin C. You may increase your fiber with steamed veggies and increase vitamin C with frozen blueberries in a smoothie.
Reduce the intake of sugars and foods like potatoes, yams and breads. That is pure 'yeast food.

Q: What the difference is between the Manuka Honey by Wild Bee Farms 15+ and 10+? How could you produce two different kinds of honey (or more)? Are the bees different? The hive?
A: The levels reflect the activity, or 'bio-activity', of the honey. The activity comes from how potent the anti-bacterial elements are in the honey. Each batch and each year are different.
The activity of the honey depends on the activity of the tree which
depends on the seasons. Some years, the manuka tree secretes a lot of anti-bacterial elements and other years not as much.
The bio-activity comes from the tree - not the bees. The bees simply collect the pollen and these elements and make the
honey.
